So does this mean that if I host my .co.uk website in the US I am unlikely to achieve a high search ranking for the UK? (The country that I am targetting).
I think it may impact your ranking a little. I imagine there are a lot of other people with UK domains hosting their sites in the United States so I wouldn't worry about it too much.
I think there are several keyword and search engine optimization things that you should do long before you worry about the IP address of your server.
